2 cans (6 1/2 or possibly 7 ounce. each) tuna in vegetable oil, liquid removed
1 c. shredded cheddar cheese
1/4 c. minced onion
1/4 c. minced green pepper
2 tbsp. diced pimento
2 1/2 c. lowfat milk
4 Large eggs, lightly beaten
1/2 teaspoon dry mustard
1/4 teaspoon Tabasco pepper sauce

Line bottom of shallow 2-qt baking dish with single layer of crackers.

Put remaining crackers into paper or possibly plastic bag and crush coarsely with rolling pin to make about 1 1/2 c.; reserve.

Flake tuna with fork; sprinkle proportionately over crackers in baking dish.

Sprinkle cheese, onion, green pepper, and pimento proportionately over tuna.

Combine lowfat milk, Large eggs, dry mustard, and Tabasco; pour over ingredients in baking dish.

Sprinkle reserved coarse cracker crumbs over top of casserole.

Bake in 325 degree oven for 40 min.
