1. Preheat the oven to 350u00b0F. Line a 9-inch springform pan with parchment paper. Peel, core and cut the apples into 8 slices each. In a medium bowl, combine the apple slices, 1/4 cup sugar and the cinnamon. Stir well and set aside.

2. In a large bowl, combine the flour, salt, remaining 1 cup sugar and baking powder. Stir well. Add all the other ingredients (except the apples) and beat with an electric mixer until smooth. Add the apples to the batter.

3. Pour the batter into the prepared pan and even out the top with a spatula. Bake for 1 hour. Remove from the oven and let it cool for a few minutes before removing from pan. Serve warm or at room temperature.
