In 10 inch nonstick skillet heat oil over medium heat; add in carrot, green pepper, onion and zucchini; saute/fry till vegetables are softened, 1-2 min.

Add in tomatoes, parsley, basil, salt and pepper; cook, stirring occasionally, till vegetables are thoroughly cooked and mix thickens, 5-8 min.

Transfer mix to 9 inch pie plate and spread in an even layer; set aside.

In blender container combine ricotta cheese and egg and process till smooth, scraping down sides of container as necessary.

Spread cheese mix in an even layer over vegetable mix; sprinkle with mozzarella cheese.

Bake till strata is puffed and lightly browned, 25-30 min; remove from oven and let stand 5 min before cutting.
