2 tablespoons olive oil
1 onion chopped
2 cloves garlic minced
3 carrots cut into cubes
2 cups canned chopped tomatoes
1 bay leaf
5 1/2 cups water
1 5/16 cups lentils
1/4 teaspoon salt
1 bunch chopped parsley
