Tomatillo Salsa

   Remove dry outer skin from the tomatillos.

   Bring pot of water to boil; add tomatillos and serranos and blanch for 1 to 2 minutes.

   Drain; then cool under running water.

   Blot dry.

   Combine tomatillos, chiles, onion, garlic, and cilantro in blender; process on slow speed until desired consistency is reached.

   Add salt and pepper to taste.
