For the spread: In a food processor puree the cheddar, feta, lemon zest, lemon juice, milk and garlic until smooth.

Stir in the basil chiffonade.

Set aside.

For the sandwiches: Set the oven to 475 F. Form each of the four sandwiches by placing two slices of turkey and two slices of mozzarella on four of the slices of bread, then topping each with another slice of bread.

Place the sandwiches on a cookie sheet and broil for one minute on each side or until each side is browned.

Remove the cookie sheet from the oven.

Spread the inside of each sandwich top with a quarter of the cheese spread and place the top back on the sandwich.

Broil for an additional minute, or until the cheese spread is golden and bubbly.
