60 grams Granulated sugar
4 Egg yolk
100 ml Heavy cream
3 Egg white
2 tbsp Liquor (rum, amaretto, cognac)
1 tbsp Instant coffee
2 tbsp Granulated sugar
80 ml Hot water
40 ml Coffee liquor
3 tbsp Sake
30 grams Biscuits
25 grams Butter
1 Strawberry compote
1 Cocoa powder

Combine the coffee syrup ingredients and once cooled, add the liquor.

Crush the biscuits and mix with melted butter.

Simmer strawberries, sugar, and lemon for the compote (not listed) or buy store-bought.

Whisk the mascarpone (bring to room temperature first) with half the sugar until smooth, drop in the egg yolks one by one, whisking with each addition.
