Heat a wok or large skillet over medium high heat with 1/2 tablespoon of coconut oil. Add onion and cook for 3 minutes until softened. Add shredded carrot and cook another 3 - 5 minutes to soften vegetables. Add spinach and cook another 3 minutes to wilt then remove to a bowl.
