Tear off four large squares of aluminium foil and lay flat on work surface. Divide sliced fennel and mushrooms evenly among the squares, placing the vegetables in the center of each square. Lay one tilapia filet on top of the vegetables on each square. Drizzle lemon juice evenly over the tilapia, then drizzle 1 teaspoon of white truffle oil over each filet. Sprinkle 1/4 teaspoon salt over each filet and top with freshly ground pepper to taste.

Fold up foil packets so that seams are on top. Tightly seal the seams. Place packets on a hot grill for 8-10 minutes until the fish and vegetables are just cooked through.
