Combine room temperature butter and sugar until light and fluffy. Add egg, incorporate well. Add flour and cinnamon, mix until combined.

Form a full tablespoon of dough into ball and place on silpat sheet or parchment paper that is on baking pan. Flour hands and press down until about 1/8 in thick. Use cookie cutter in desired shape and press down into dough. Leave cutter there, and remove excess dough. Lift up cookie cutter and repeat process.

For frosting, Place the butter in a large mixing bowl. Add 1 cup sugar and then the milk and vanilla. On the medium speed of an electric mixer, beat until smooth and creamy, about 3-5 minutes.

Gradually add the remaining sugar, 1 cup at a time, beating well after each addition. (about 2 minutes) You may not need to add all of the sugar. You will want a thick pancake batter consistency for these dessert sandwiches. Add milk to water down, sugar to thicken.

After cookies have cooled, you can start to assemble the sandwiches.

Take one circle cookie and place it on your plate or serving tray. Gently add frosting with a piping bag. Add another cookie, do another layer of frosting. Gently add final cookie.

Drizzle with hot fudge or melted milk chocolate.
