Melt the chocolate over a low heat with the coffee. (I use a double boiler or place mixture in a bowl over a hot pan of water to prevent burning) Mix in the butter, and when melted, add the egg yolks, stirring in well. Turn off the heat. Stir in the zest and liquor. Beat the egg whites with the salt and cream of tartar until they reach a soft peak. Cut and gently fold the egg whites into the chocolate mixture with a spatula. Spoon into individual ramekins or martini glasses, cover with plastic wrap, and chill for at least two hours
