1
Begin by preheating your oven to 400 F. Poke the top of each potato with a fork and place on a baking sheet.
-
2
Cook in the oven for 1 hour.
-
3
Once cooked, remove potatoes from the baking sheet, and place on a plate to let them cool for about 15 minutes.
-
4
Once your potatoes are cooled, use a sharp bread knife and cut them in half lengthwise.
-
5
So each potato will yield two skins, right?
-
6
You should then have 12 skins.
-
7
With a small spoon, being careful, scoop out about 70 percent of the potato from each skin, as you still want some potato in your boat.
-
8
Next, put your butter and olive oil in a microwave safe bowl and melt them together in the microwave.
-
9
This will probably take about 30 to 60 seconds.
-
10
Get your broiler heated to high.
-
11
Brush the butter and oil mixture on the inside and outside of each potato skin and place them back onto the baking sheet.
-
12
Season the inside of each skin with salt and pepper.
-
13
Place them under the broiler (cut side up) for 8-10 minutes until the insides get a bit crispy from the melted butter.
-
14
Remove the tray from the oven and place generous amounts of cheddar cheese and ground beef into each skin.
-
15
Then top each with a few bacon pieces.
-
16
Place these back under the broiler for about 3-4 minutes until the cheese is nice and bubbly.
-
17
Carefully remove the tray from the oven, and get ready.
-
18
Next, add the caramelized onions and top with the cooked egg.
-
19
Sprinkle a bit of crushed pretzels on top of the egg.
-
20
Take a look.
-
21
Sit back and enjoy this thing of beauty.
-
22
One bite says it all.
-
23
This potato skin might just be the cure for those groggy mornings after a night out on the town.
-
24
Give them a shot and let me know what you think.
