The Chewy Chocolate Chip Cookie

   melt butter in a 2quart sauce pan over low heat then set aside to cool slightly

   sift flour , salt, baking soda onto a paper plate

   pour butter into your stand mixer bowl, add the sugars and beat with a paddle attachment on medium for 2 mins

   meanwhile, whisk the whole egg, egg yolk, milk and vanilla extract in a measuring cup

   reduce speed, slowly add the egg mixture, mix for about 30 seconds

   using the paper plate as a slide, gradually add the dry ingredients, stopping to scrape the bowl down

   then drop the speed to 'stir' and add the chocolate chips

   chill the dough for 1 hour

   heat the oven to 375 and place the racks in the top third and bottom third of the oven

    scoop the dough into 1 1/2 ounce portions onto parchment paper lined half sheet pans , 6 on each

    bake two sheets at a time for 15 mins, rotating halfway through

    remove from oven and slide the paper with the cookies onto cooling racks let stand 5 mins
