Sprinkle/coat the chicken with the flour.

Brown the chicken over medium-high heat.

Melt the butter in the pan and pour olive oil in before placing the chicken breasts in to brown.

All you need to do is brown it on both sides (it will cook more in the oven).

Place in a casserole dish, cover the chicken with aluminum foil and bake for 25 minutes at 375 degrees.

While the chicken is baking, combine apricot preserves, mustard, and yogurt.

When the chicken is finished, remove from the oven and pour the apricot mixture over the chicken and bake for 30 minutes more.

(You can leave the alumnium foil on or take it off for the second round of baking- whichever you prefer!)

Once the chicken has baked for 30 minutes, remove it from the oven and sprinkle with almonds if desired.
