Tex's Pizza Toastie

   If you'll be cooking with an overhead grill (salamander) take your bread, or a sliced ciabatta, and toast each piece on one side, otherwise there's no need.

   Butter the un-toasted sides (unless cooking with an overhead grill), then choose one slice to begin stacking on.

   Cover the un-buttered side with enough ham to hide the bread, then add a good smear of ketchup.

   Season the ketchup with salt, pepper, garlic granules, (and dried herbs if required).

   Cover this with sliced cheddar and chopped basil.

   If you're using an overhead grill, melt the cheese now until it bubbles.

   If you're using a sandwich toaster, pan frying, or a panini press don't bother

   Next add the chorizo and a few more blobs of ketchup.

   Then add any left over cheese and ham.

    Season with a little extra salt and pepper if required.

    If using an overhead grill, cook on low for a further 2 minutes, otherwise put the lid on top and cook in your press, pan, or sandwich toaster.
