Tasty Tater Skins

   Preheat oven to 475 degrees.

   Fry your bacon until crispy and remove to paper towel lined plate.

   Now take a deep breath...(forgive me dietitian aunt).

   Roll the potatoes in the bacon grease and place skin side up in 9 x 13 baking dish.

   Place the potatoes in the oven for 8-10 mins.

   Remove and flip potatoes over so that skin sides are down.

   Fill with cheese, bacon, green onions, and peppers.

   Serve with ranch sour cream.

   Ranch Sour Cream 1 C Sour Cream 1 T Hidden Valley Ranch Dry Salad Dressing Mix Mix well.

    **I baked my potatoes wrapped in foil, sprayed with non stick cooking spray, and sprinkled with sea salt.

    My potatoes took about 2 hours at 400 degrees.

    I then sliced them & scooped out some of the insides.
