Swiss Cheese Pie(Or Cheese Puffs)

   Melt butter; add flour.

   Add milk, stirring constantly, until thick and smooth.

   Over low heat, add egg yolks and slowly add grated cheese until melted.

   Remove from heat.

   Beat egg whites until stiff; fold in cheese mixture.

   Pour into unbaked pie shell and bake at 400u00b0 for 15 minutes, then turn down oven to 375u00b0 and bake until golden brown, about 25 minutes more, or until knife comes out clean.
