1 teaspoon oil
2 carrots, sliced
1 bell pepper, chunked
1 onion, chunked
1/2 cup ketchup
1/3 cup brown sugar
1 tablespoon cornstarch
1 tablespoon soy sauce
1 teaspoon ginger
1 garlic clove, pressed
salt and pepper
hot cooked rice

Drain pineapple, reserve the juice.

Cut chicken into bite size pieces and season with salt and pepper.

In a large skillet, brown chicken in oil.

Combine reserved pineapple juice, ketchup, brown sugar, cornstarch, soy sauce, ginger and garlic in a small bowl until blended.
