Sweet Potato Sun Wheels

   Boil sweet potatoes; peel and mash.

   Beat potatoes until smooth.

   Add egg, butter, sugar and vanilla.

   Slice each pineapple ring to make 2 thin rings.

   (Rings may break, but merely put together in a circle.

   Also, it helps to freeze the pineapple before slicing.)

   Place 8 thin rings of pineapple in a baking pan and place a mound of the potato mixture on each slice of pineapple.

   Cover with the remaining 8 rings.

   Bake at 325u00b0 until heated (about 30 minutes).

    Remove and sprinkle with coconut. Place in oven to brown coconut or in broiler, watching carefully to avoid burning coconut.
