Sweet Potato Steamed Bread Made with Pancake Mix

   Cut the sweet potato into 1 cm cubes, and soak in water.

   Loosely cover with plastic wrap, and microwave for about 4 minutes at 500 W.

   Put all the ingredients except for the sweet potato into a bowl, and mix well.

   Add the microwaved sweet potato, and mix.

   (Set aside a little for topping.)

   Line heatproof cups with muffin wrappers, and pour in the batter.

   Top with the sweet potato, and steam in a steamer for about 15 minutes.

   Since I used paper muffin cups, I put them in pudding cups, and steamed.

   You can also use a 6 cup muffin tray.
