Sweet Potato Mash

   Preheat the oven to 350 degrees F.

   Place the sweet potatoes on a baking sheet, drizzle with olive oil and bake until soft, about 20 minutes.

   When cool enough to hold, remove the peels and place in a saucepot.

   Add the butter, cream, salt and pepper and mash together.
