Sweet Potato Latkes

   In food processor, puree eggs, brown sugar, apple pie spice, salt and pepper until smooth.

   Add 2 cups shredded sweet potatoes and matzah meal and pulse-puree for 15-20 seconds.

   Transfer mixture to med-sized bowl and stir in remaining sweet potatoes.

   Heat veg oil, 1 inch deep.

   Form 1/4-cup potato mixture into pancakes and fry until golden (approx. 6-8 min per side).
