Meanwhile, place sweet potato in a microwave-proof bowl. Cover. Microwave on high 5-7 mins, until tender.

Preheat the oven to 425u00b0F. Line a baking pan with parchment paper.

Turn dough out onto a lightly floured surface. Punch down and knead lightly for a few seconds. Press or roll into a 14 x 9-inch rectangle. Place on prepared pan. Brush dough with remaining oil and top with sweet potato. Crumble cheese over top and sprinkle with thyme. Season.
