Sweet Pepper Toasts

   Wash the peppers, remove the seeds and cut into small chunks.

   In a frying pan or skillet, pour a dash of olive oil, add the onions and cook until brown.

   Add the peppers, cover and cook for about 10 minutes. Add a few tsps of water as necessary to keep from sticking to the pan.

   When the peppers are soft and tender, remove from the heat, add salt to taste and leave to cool.

   Toast the bread. Spread with garlic butter.

   Add peppers and cheese, place under a grill for a few minutes and serve.
