Sweet and Sausage Stir Fry

   In a large nonstick skillet, stir fry sausage 3-4 minutes or until lightly browned.

   Add onions, and carrots, stir fry until crisp tender.

   Drain pineapple, reserving juice.Add pineapple to sausage/vegetable mixture.

   In a small bowl, combine cornstarch and ginger.

   Stir in water, soy sauce, and reserved pineapple juice until smooth.

   Add soy sauce to skillet.

   Bring to a boil, Cook, stirring continually for 1-2 minutes, or until sauce is thickened.

   Serve over cooked rice.
