1. Preheat oven to 425 F. Wash potatoes. Peel the sweet potato. Slice both potatoes into 1/4 inch thick slices, and 1/2 the length of the potato long.

2. Mince garlic. Spray 2 large rimmed baking sheets with olive oil cooking spray. Place 1/2 the potatoes on each tray. Add half of the oil over the potatoes on each baking sheet. Toss the oil with the potatoes. Add half of the garlic powder, salt, pepper and minced garlic over each baking sheet. Toss together until evenly coated.

3. Place baking sheets in oven, and cook for 25 minutes, or until golden brown, rotating upper and lower racks and flipping fries at the halfway point. When done, remove trays from the oven.

4. Once out of the oven, combine them onto one tray. Add Parmesan cheese and a little salt for garnish and toss.

5. Serve immediately.
