Swedish Meatballs

   In a small skillet, melt one tbsp butter, add onion and saute until light brown and translucent, set aside.

   Pre-heat oven to 375 degrees. In a large mixing bowl, combine bread crumbs and water, let stand until soft (about 1 to 2 minutes). Add sauteed onions, beef, pork, egg yolks, salt, pepper, nutmeg and allspice.

   Mix until all ingredients are evenly incorporated. With greased hands, roll mixture into 1 inch balls. In a large skillet over medium-high heat, melt 4 tbsp butter. Add meatballs and cook until brown on all sides. Put the meatballs into a glass baking pan and cook for 10-12 minutes.

   In the same sauce pan you cooked your meatballs in, add the flour to the skillet with the left over oil, and add flour. Cook, stirring until golden brown. Slowly add the beef stock, whisking until the gravy is thick and smooth. Add sour cream last and stir to incorporate.

   Serve over meatballs.
