1/4 c. milk
6 Tbsp. onion, chopped
1/2 stick butter
1/2 tsp. pepper

1 1/2 Tbsp. pimento, chopped
parsley

Cook potatoes with jackets and peel while hot.

Cool and cube them.

Mix in green pepper, cheese, salt, milk, pimento, onion and pepper.

Place in a baking dish and pour melted butter on top. Sprinkle with parsley.

This can be prepared ahead of time, removing from refrigerator at least 3 hours before baking time.
