Sunshine's chocolate mint & meringue cookies

   Preheat oven to 375F.

   Grease and lightly flour two baking sheets .

   Beat egg whites with cream of tartar and salt until foamy.

   Gradually beat in sugar , 2 tablespoons at a time , until soft peak form .

   Stir in red food coloring and vanilla extract .Fold in chocolate & mint morsels.

   Drop meringue by teaspoonfuls, 1 inch apart , onto prepared cookie sheets.

   Place in preheated oven .

   Turn off heat , let meringue set in oven 6 to 8 hours .
