For the dressing

In a small bowl whisk together olive oil, balsamic vinegar, coriander seeds and snipped herbs, until thoroughly mixed.

For the salad squares

Peel the watermelon and cucumber. Peel and pit the avocado. Cut the watermelon, cucumber, tomato, avocado and cheese into equal size square pieces. Arrange in 4 x 3 rows on individual serving plates. Garnish with more snipped herbs. Drizzle with dressing.

Notes: This is best prepared right before serving, but if you need to prepare ahead I would suggest squeezing some lemon on the avocado so it stays nice and green. I used basil and chives for the fresh herbs, but it would also be delicious with fresh mint or even fresh tarragon.
