Sucket(Candied Citrus Peel)

   Remove peel from oranges and put in saucepan.

   Cover with water and bring to a boil.

   Cook over medium heat for 20 minutes. Drain, rinse, cover with cold water and boil for 15 more minutes. Drain.

   Remove white membranes by gently scraping with spoon.

   Cut into 1/4-inch wide strips.

   Combine 3 cups water, sugar and spices.

   Boil until sugar dissolves.

   Add peel and cook until syrup is absorbed.

   Drain.

    Remove spices.

    Toss peel in sugar until it is coated.
