Ricotta or cottage cheese; 1/2 lb. shredded Mozzarella cheese; 1 Tbsp. chopped parsley; 2 Tbsp. sugar; 1 egg, slightly beaten; 1/2 tsp. salt; 1/8 tsp. pepper; 1 lb. ground beef; 1/2 tsp. salt; 1/8 tsp. pepper; 1 clove garlic, crushed; 32 oz. jar spaghetti sauce with mushrooms; 1/2 c. water; 1/3 c. grated Parmesan cheese

12 manicotti shells
1 1/2 lb. Ricotta or cottage cheese
1/2 lb. shredded Mozzarella cheese
1 Tbsp. chopped parsley
2 Tbsp. sugar
1 egg, slightly beaten
1/2 tsp. salt
1/8 tsp. pepper
1 lb. ground beef
1/2 tsp. salt
1/8 tsp. pepper
1 clove garlic, crushed
32 oz. jar spaghetti sauce with mushrooms
1/2 c. water
1/3 c. grated Parmesan cheese

Cook pasta in salted boiling water.

Gently drain and remove from water.

Don't overcook or they will split and fall apart. Mix Ricotta, Mozzarella, parsley, sugar, egg, 1/2 teaspoon salt and 1/2 teaspoon pepper.

Fill shells with this mixture.

Brown ground beef with remaining salt and pepper.

Drain.

Add garlic, spaghetti sauce and water.

Simmer 5 minutes.

Cool.

Pour 1/2 sauce mixture in baking dish; top with filled shells.

Pour remaining sauce over all.

Bake for 30 minutes in a 400u00b0 oven. Sprinkle with Parmesan about 5 minutes before done.
