Preheat oven to 350 degrees F. Butter a 10-inch pie plate.

Use a small paring knife to slice open the vanilla bean (lengthwise from top to bottom). Use the knife to scrape out the insides. Add the insides and the rest of the vanilla bean to the pan. Melt butter and sugar; add sliced strawberries and lemon juice. Simmer it on very low heat for about 15 minutes.

To make the crumbs sift flour into a medium bowl, add sugar, cold butter and cinnamon together. then using your fingertips quickly rub all ingredients until it resembles coarse breadcrumbs then set aside.

Put strawberry filling into buttered baking pan, cover it with the crumbs and bake it for about 40 minutes. Best with vanilla ice cream, whipped cream or both! Don't forget your big spoon
