For Base:

Melt butter and chocolate over low heat,blend in crushed biscuits, press into springform baking container. place in refrigerator.

For Filling:

take 1/2 the strawberries and mash strawberries into chunky puree or one pulse of blender.

Mix by hand the quark, 100g of the sugar and eggs, with the strawberry mixture until smooth. spoon the mix over the base.

Bake in med/low oven 170c for approx 1 hour - mixture should be risen leave cheesecake for 30 minutes the centre will sink when taken out of oven, this is fine and leaves a nice area for the topping.

For topping:

poach remainder of strawberries with 2 tablespoons of water, add 50g sugar quickly boil and thicken with the cornflour. pour in well of cheesecake.

refrigerate for 30 minutes.
