Strawberry bread

   Preheat oven go 350.

   Spray loaf pan with nonstick cooking spray.

   Place mashed strawberries with their juice in a medium saucepan.

   Bring to a boil over medium heat.

   Cook and stir 1 minute then remove from heat.

   They will produce a lot of moisture.

   Do not drain.

   In medium bowl, whisk together flour, baking soda, cinnamon, baking powder, and salt.

   In large bowl, cream together butter and sugar.

    Add eggs, one at a time.

    Add half of flour mixture, then half of strawberries.

    Add remaining flour mixture, then remaining strawberries.

    Batter will be very wet.

    Bake 60-70 minutes or until toothpick inserted near center comes out clean and bread is pulling away from the sides of the pan.

    Cool on wire rack.
