Steamed Sweet Potato Bread Made with Pancake Mix

   Mix the ingredients marked to make a thick, creamy batter.

   Place some aluminium cups in the frying pan, and pour the mixture in so they are 70% full.

   Top with diced uncooked sweet potato cubes.

   Add a small amount of water to the frying pan and bring to the boil over strong heat.

   Put the lid on, and steam over low heat for 10-12 minutes to finish If the sweet potato is still a little floury, it might be better to let them steam a little longer.
