-
1
preheat oven to 400
-
2
wash potatoes and fork them all over..
-
3
bake for 40 minutes or until soft all the way through.
-
4
meanwhile...
-
5
slice steak against the grain into strips.
-
6
then cut the strips so they are bite sized.
-
7
place bacon grease in a skillet and heat until hot.
-
8
place steak pieces into skillet and toss.
-
9
heat should be on medium.
-
10
chop onion.
-
11
and place onion into skillet.
-
12
toss together.
-
13
place sliced mushrooms into skillet.
-
14
toss together.
-
15
toss in chives, garlic, salt and pepper, mix well.
-
16
(if u want to add any other veggies do this now.. great veggies to add would be chopped broccoli, green beans, green pepper, fresh baby spinach)
-
17
by now the steak should be cooked through.
-
18
add the half and half and give a good stir..
-
19
lower heat to medium low so it is simmering, not boiling.
-
20
and simmer covered for 20 minutes.
-
21
keep an eye on it and stir occasionally, if it starts to dry out add a dash more bacon grease or add a bit of beef broth(I didn't have a problem with this)
-
22
after 20 minutes of simmering the flavors should be well incorporated and ur potatoes should now be done.
-
23
place a baked potato on a plate
-
24
cut the potato in half
-
25
cut the halves into 3rds.
-
26
push together it kinda makes it look like a flower.
-
27
pour 1/4 of your steak skillet on top of potato.
-
28
sprinkle with 1/4 of the cheese.
-
29
add a dollop of sour cream.
-
30
and sprinkle with 1/4 of the bacon bits..
-
31
repeat with the rest of the potatoes and steak..
-
32
serve hot!
-
33
TIP: u can use any type of steak u would like.
-
34
I used eye of round because its cheap.
-
35
russet potatoes work best but I prefer red potatoes because I like to eat the skin on red potatoes but not russet potatoes.
-
36
I made mine this time without the dollop of sour cream and without the bacon bits because I ran out and cash was low.
-
37
definitly better with them!
