Ingredients: 6 Tbsp. butter or margarine; 4 or 5 cube steaks; 1 1/2 tsp. salt; 1/4 tsp. dry mustard; 1 can mushrooms; 4 c. sliced potatoes; 1 c. sliced onions; 1/4 c. flour; 1/4 tsp. pepper; 2 c. buttermilk; 2 Tbsp. chopped parsley

6 Tbsp. butter or margarine
4 or 5 cube steaks
1 1/2 tsp. salt
1/4 tsp. dry mustard
1 can mushrooms
4 c. sliced potatoes
1 c. sliced onions
1/4 c. flour
1/4 tsp. pepper
2 c. buttermilk
2 Tbsp. chopped parsley

In large skillet, melt butter; saute onions until tender. Remove from skillet.

Brown meat and remove.

To pan drippings, add flour, salt, pepper and dry mustard.

Remove from heat. Gradually stir in milk; cook over medium heat, stirring constantly until thick.

Cook an additional 2 minutes.

Stir in mushrooms and parsley.

In 2-quart shallow casserole, layer potatoes, onions and steak.
