You can increase the quantity of squash to serve more. I increase the eggs by one for every 2 squash I use. Finely grate the squash when you are fixing to cook(squash will become watery after grating if you grate too early), beat add and add to mixture. Salt/pepper to taste. Add finely chopped onion and/or bell pepper to taste. Gradually add flour (by the teaspoon) until the mixture holds together.

In a fryer, add oil and bring to med-high heat. Drop the mixture by large tablespoons and press almost flat. Fry until brown (as desired) on one side and then flip. It only takes a few minutes. remove and place on paper towels to absorb the grease. Serve immediately. They are GREAT! Not to bad warmed up.
