Preheat oven to 425u00b0F. Lightly grease and flour a baking tray.

For the caramelized onions, heat butter and oil over medium heat. Sweat onion for 6-8 mins, until tender. Add honey and vinegar. Cook, stirring, over low heat for 4-5 mins, until caramelized. Let cool.

Meanwhile, sift flour into a large bowl. Cut in butter until mixture resembles breadcrumbs. Add squash, buttermilk, egg, thyme and caramelized onions. Season. Quickly mix into a soft, sticky dough. Turn out onto a floured surface and knead lightly. Press into a 3/4 inch thick disc then cut into 16 - 2 1/2 inch rounds. Place close together on prepared tray and brush with extra buttermilk. Bake for 20-25 mins, or until golden brown. Let cool on a wire rack.
