In a large mixer bowl, beat the butter, sugar, egg yolk and vanilla until smooth and fluffy.

With the mixer on low, beat in the flour mixture one third at a time, mixing until smooth and well combined.

Assemble and fill a cookie press with the dough, according to the manufacturer's instructions. Stand the press upright on a cold cookie sheet. Squeeze out enough dough to form the cookie shape on the disk, and release pressure, lifting up slightly to cut off the dough. Continue with the rest of the dough. Cookies should be spaced about 1 1/2 inches apart on the tray. Decorate with the cinnamon candies and colored sugar.

Bake 8 to 10 minutes, or until a light golden color is reached. Remove pans from oven and move cookies to a wire rack and cool.
