1 1/2 c. water
3 eggs or 6 egg whites
3 Tbsp. grated Parmesan
1 pkg. frozen spinach, chopped and drained
1/2 tsp. nutmeg
pepper to taste
1 Tbsp. lemon juice
1 medium onion, chopped
1 Tbsp. margarine
1 c. skim milk

Cook rice in water until tender; drain and mix with 1 beaten egg and tablespoon cheese.
