Spinach Linguine With Anchovied Spinach

   1. Boil 3 quarts water in covered pot.

   2. Wash and trim spinach, dry in paper towels.

   3. Rinse, dry, and finely mince anchovy fillets.

   4. Heat olive and chile oils in large, heavy pot.

   5. Add anchovies and garlic and cook over high heat, stirring, until garlic begins to brown.

   6. Add spinach and stir. Cover and cook until wilted, 2-3 minutes.

   7. Cook linguines for about 2 minutes.

   8. Drain and add to spinach, toss well.
