Ingredients: 1 teaspoon Olive Oil; 1 whole White Onion, Chopped; 1 whole Shallot, Chopped; 3 cloves Garlic, Smashed And Minced; 1 bag (16 Ounce Bag) Frozen Chopped Spinach; 2 cups Vegetable Stock (or Water); 1 cup Flour; 1 teaspoon Salt; 1 teaspoon Baking Powder; 2 whole Eggs; 1 cup Milk; 1/2 sticks Melted Butter; 8 ounces, weight Mozzarella, Shredded; 1/2 cups Parmesan Cheese, Grated; 4 ounces, weight Feta Cheese, Crumbled

1 teaspoon Olive Oil
1 whole White Onion, Chopped
1 whole Shallot, Chopped
3 cloves Garlic, Smashed And Minced
1 bag (16 Ounce Bag) Frozen Chopped Spinach
2 cups Vegetable Stock (or Water)
1 cup Flour
1 teaspoon Salt
1 teaspoon Baking Powder
2 whole Eggs
1 cup Milk
1/2 sticks Melted Butter
8 ounces, weight Mozzarella, Shredded
1/2 cups Parmesan Cheese, Grated
4 ounces, weight Feta Cheese, Crumbled

Preheat oven to 375 degrees F .

Lightly grease a 9x13 inch baking dish.

Heat olive oil in medium saucepan over medium heat and saute onion, shallot and garlic until onion and shallot are clear.

In same sauce pan add spinach with vegetable stock or water (use just enough to cover the mixture).

Bring to a boil.

Lower heat to simmer and cook until spinach is limp, about 3 minutes.

Remove from heat and set aside.

In a large bowl, mix flour, salt and baking powder.

Stir in eggs, milk and butter.

Mix in the spinach mixture and the mozzarella, parmesan, and feta cheese

Transfer the mixture to the prepared baking dish.

Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.

Cool before serving.
