Spinach and Ricotta Pasta Sauce

   Spary a large non stick saucepan with cooking spray and add the onion, garlic and spinach.

   Stir fry for 8-10 minutes.

   Add the nutmeg (if using) ricotta and broth.

   Cook for a further 4-5 minutes, stirring often.

   Remove from the heat and season well.

   Serve mixed with cooked pasta of your choice.
