Ingredients: 2 teaspoons seasoned flour; 12-1 teaspoon chili powder; 8 chicken thighs; 1 tablespoon vegetable oil; 1 onion, chopped; 2 ½ cups chicken broth; 2 garlic cloves, minced; 2 tablespoons tomato paste; 2 zucchini, cut into chunks; 1 lb red ripe tomato, cut into chunks

2 teaspoons seasoned flour
12-1 teaspoon chili powder
8 chicken thighs
1 tablespoon vegetable oil
1 onion, chopped
2 ½ cups chicken broth
2 garlic cloves, minced
2 tablespoons tomato paste
2 zucchini, cut into chunks
1 lb red ripe tomato, cut into chunks

Mix togather the seasoned flour and chilli powder.

Use to coat the chicken thighs.

Set aside remaining seasoned flour.

Heat the oil in a large frying pan with a lid.

Add chicken and fry over a medium-high heat for 8-10 mins, turning once until browned all over.

Transfer to a plate.

Add the onion to the pan and cook for 5-6 mins, stirring until softened.

Sprinkle in the reserved seasoned flour and cook for 1 min stirring continuously.

Add broth, garlic and tomato paste.

Return chicken to the pan and bring to the boil.

Scatter over zucchini and tomatoes.

Stir, cover and simmer for 15-20 minutes.

Serve with mashed pototoes to sop up the sauce!
