Italian sausage meat; 2-3 T minced fresh coriander; 1 C grated Monterey Jack cheese; 1 egg, beaten lightly; 1/3 c dry bread crumbs; 36 mushrooms (approx 1 1/2 lb)

1/3 c minced scallions
1 large clove garlic, minced
1/2 -1 T drained and minced jalapeno pepper
1/3 c minced red bell pepper
1 T olive oil
1/2 lb. Italian sausage meat
2-3 T minced fresh coriander
1 C grated Monterey Jack cheese
1 egg, beaten lightly
1/3 c dry bread crumbs
36 mushrooms (approx 1 1/2 lb)

In a skillet, cook the scallions, garlic, Jalapeno pepper and bell pepper in the oil over moderately low heat, stirring until vegetables are softened. Add sausage and cook until sausage is no longer pink, breaking up lumps.

Remove from heat and stir in coriander, 1/2 c cheese, egg, bread crumbs. Season to taste with salt and freshly ground black pepper.

Divide the mixture among mushroom caps mounding slightly. Arrange in one layer on a lightly greased shallow baking dish.

Sprinkle with remaining cheese and bake in the middle of a preheated 400 degree oven for 15 minutes until lightly brown and bubbly.
