Spicy Peppered Roast Beef

   Mix all the ingredients in a bowl, increasing the olive oil and balsamic vinegar for a wetter mixture or adjusting the dry ingredients accordingly. The paste should be moist enough to spread evenly across the top & sides of a 4lb prime rib or sirloin beef joint, but dry enough that it sticks to the meat without sliding off during the cooking process. If using a rolled joint of beef, remove any elastic netting beforehand.

   Cook the coated meat at 325 for 20 to 25 minutes per pound plus 20 minutes (according to taste). Let stand for 5 minutes before carving.

   Best served for Sunday dinner with Granny Hook's Yorkshire puddings!!
