Ingredients: 2 cups penne pasta; 2 Italian sausages; 1 cup tomato sauce; 1 small onion, sliced; 3 garlic cloves, minced; 3 tablespoons olive oil; ¾ cup sliced mushrooms; 2 roma tomatoes, chopped; 2 tablespoons fresh basil, chopped; 3 tablespoons fresh parsley, chopped; 1 teaspoon chili flakes; 2 teaspoons anchovy paste; salt; pepper; parmesan cheese, grated

2 cups penne pasta
2 Italian sausages
1 cup tomato sauce
1 small onion, sliced
3 garlic cloves, minced
3 tablespoons olive oil
¾ cup sliced mushrooms
2 roma tomatoes, chopped
2 tablespoons fresh basil, chopped
3 tablespoons fresh parsley, chopped
1 teaspoon chili flakes
2 teaspoons anchovy paste
salt
pepper
parmesan cheese, grated

In frying pan, add 1/2 tbsp oil and brown sausages, approximately 5 minutes.

Add 1/4 cup of water and cover.

Let cook for approximately 8 minutes, remove from pan and set aside.

In same pan, add remaining oil and onions and saute for 3 minutes.

Add mushrooms and a pinch of salt and saute for 3 minutes.

Add garlic, anchovy paste and chili flakes and cook for 5 minutes.

Add tomatoes and saute for 5 minutes more.

Cut the sausages into diagonal slices and add them to the pan along with the tomato sauce and cook till sauce is thickened, approximately 8 minutes on med/high heat.

Remove from heat and add the basil and parsley.

Drain pasta and add to the sauce.

Serve topped with grated parmesan.
