In a bowl mix together the coriander, cumin, paprika/chili powder , olive oil and salt and coat the steaks. Cover, and refrigerate for 2 hours.

Sprinkle a splash of olive oil in to a pan , add the brown sugar (caramelizing),chopped onions and fry it for 2 minute. Once onions are brown, add the ginger, garlic and cilantro and cook it for 1 minute.

Add the steaks and fry the steaks at a high temperature for 1 min each side then reduce the heat and fry for around 2 mins each side. Transfer to a bowl and let cool.

Light a grill or preheat a grill pan and oil it lightly. Grill over a hot fire for 3 to 4 minutes per side for medium rare or more if you prefer it well cooked.

Transfer to plates and serve at once with a bowl of rice /noodles. It's Quick and simple yet very tasty.
